Hearts of Palm Dip

Hearts of palm come from the core and bud of certain palm trees. Most are imported from Costa Rica. They’re nice in stir-fry, gluten-free pizza, sauces and dips.
Makes about 1½ cups


  • 1 can heart of palm
  • 3 Tbsp olive oil
  • 1 tsp lemon juice
  • 2 cloves garlic
  • 3 Tbsp Italian parsley
  • Sea salt to taste

Option(okay for gut repair)

  • 1 avocado for a creamier dip

Option(not for gut repair)

  • Pepper to taste
  • Dash of pepper or paprika, or spice it up with a dash of cayenne

Put all ingredients in a food processor and blend until smooth. Serve with carrots, celery, and sliced cucumber.
